Wicked Good Espresso Brownies

I needed something really sweet today. I needed a reward. I NEEDED IT! All my usual treats were gone (Yes, I’m sure, I checked all the usual ‘hide this from myself’ places).

So, I put on my baking hat and created something a little different… some fairly AWESOME brownies (if I do say so myself!) And, I figured I’d share this with you (and record it here) before my latest creation drifts out of memory and is lost forever.

Angela’s Wicked Good Espresso Brownies

  • 1 cup Self Rising Flour
  • 1 stick butter (melted)
  • 3 eggs
  • 2 cups sugar
  • 2 tsp vanilla (the real stuff, please)
  • 1/2 cup cocoa
  • 1/3 cup extra fine ground italian espresso coffeebeans

Mix the flour, sugar, cocoa in a bowl. Add cooled, melted butter and eggs. Mix until smooth. Add vanilla and espresso. Mix again until smooth. Bake at 300 degrees until top is crusty and corners are starting to pull away from the pan.

Turn off oven and let brownies cool inside the oven. When cool, cut into squares and devour. Super-easy recipe. Cheaper than a mix. Done in minutes. I simply LOVE the simple life!

These brownies are the gooey variety. I don’t really like the cake style brownies. If I want cake, I bake a cake. 🙂
