Yesterday, while I was cooking breakfast (and the Honey Badger was *gasp* sweeping the floor — yes, he really was!), I threw two boneless breasts of chicken in the crockpot with a cup of brown rice, a couple tablespoons of wild rice, a tablespoon of dried basil, a tablespoon of dried oregano, a teaspoon of dried red (hot) pepper, some sea salt and enough water to satisfy me.
Then, I went about my Sunday cleaning chores. (I meant to add some chopped onion later, but I forgot.) That evening, I had a GREAT meal ready to scoop out and eat. I added a side of fresh fruit salad (and the Honey Badger had the addition of tortilla chips and salsa).
So easy, so simple, so healthy!
